Passover Fudge Muffins

1 ½ cups cocoa
3 ½ C. raw sugar
2 C. fine matzo meal or
matzo four
Preheat oven to 300 ° F.
1. Mix cocoa, sugar, and
matzo flour in large
mixing bowl.
4 sticks butter
8 eggs
2 tsp. vanilla
2. Melt butter in microwave. Then add
to cocoa mixture along with eggs and vanila.
Mix evenly.
1 pkg. (6oz) chopped walnuts
 
 
 
 
Add nuts. Spoon into paper cups placed in
muffin pans and bake 40 mins. at 300 ° F.
Makes 36. Don't overbake! Toothpicks inserted
should be sticky.
Decorate with a dollup of
non-dairy whipped topping or maraschino cherry!
For Passover fudge cake, use 1 ½ cup of matzo meal or matzo flour
instead of 2 cups for muffins, and preheat oven to 350 ° F.  
 
1. Melt butter in microwave and combine with cocoa andn eggs and
mix well. Then add sugar, matzo four, and vanilla in large mixing
bowl. When all ingredients are evenly moistened, add nuts.

2. Pour into 9x12 inch greased glass baking dish and bake 45 minutes.
Don't overbake! Should be very moist. Decorate top by lightly
dusting with powdered sugar. Cover tightly to keep moisture in.

Just before serving, decorate with a dollop of non-dairy whipped
topping and a strawberry or maraschino cherry!
